El nostre bestiar, criat i sobretot, "acabat" amb pastura (és a dir, que no passa per una fase d'engreix final amb pinso), representa una petita proporció de la producció càrnia nacional. Hem triat produir aquest tipus de carn especialment per qüestions de salut, sabor i benestar animal.

100% pasture-raised meat

In fact, the industrial production model favors certain breeds to obtain a large amount of meat in the shortest possible time (approximately one year). Therefore, the subtle qualities of this meat, such as the development of more complex flavors or its health benefits are ignored.

Consistently raised meat has stronger flavors thanks to the influence of aromatic elements, the reactive polyunsaturated fatty acids provided by the grass, and the chlorophyll from the variety of plants it feeds on. It is also a leaner and tougher meat both due to the diameter of its muscle fibers and the amount of connective tissue caused by exercise during its more than two years of life. On the other hand, it provides more sweetness and depth of flavor “The meat that has all its flavor comes from animals that have lived a full life. Life intensifies the flavor.”

Quan salar

Aquest tipus de carn té menys aigua que la carn convencional, per la qual cosa si la salem massa aviat pot quedar dura i seca. Així doncs, és aconsellable salar la carn just abans de cuinar-la preferiblement amb sal marina natural sense refinar.

Temperatura de la carn

És important treure la carn de la nevera i deixar-la fora entre 15 minuts i 1 hora depenent de la mida de la peça i la calor de l’espai, per aconseguir una temperatura uniforme abans de cuinar-la. Així obtindrem més melositat, sabor i consistència.

Temperatura de cocció

De manera general la carn de pastura es cuina a temperatures baixes o mitges. Si es tracta de peces grans com l'entrecot, és aconsellable deixar reposar uns minuts la carn al plat un cop cuinada i abans de tallar-la. D’aquesta manera podrem gaudir d'una carn sucosa.

    GRASSING COWS

    La Casanova’s cows are 75% Angus and 25% Asturian mountain. This breed is ideal for making pasture-raised meat and at the same time ideal for helping us maintain forests, the land and recover pastures for horses.

    We use a holistic management system and regenerative grazing to avoid overgrazing the forest. With this directed grazing we are able to plan and make decisions that help us to manage resources much better in a sustainable and regenerative way. A properly managed forest captures much more CO2 and is much more productive and ecological.
